spring break separations

so we're on spring break and all in different states.
i'm in texas, alissa's in new york, and lauren's in connecticut

we decided to resort to the next best thing..

movie nights

who doesn't love a movie night with your best girl friends? 
well, we sure do!
what goes into the perfect movie night?

#1: stop and smell the flowers


#2: find the perfect theater location

we like 34th st. because despite the hoards of tourists, the theater is always clean and doesn't smell like a bodily function like so many do in nyc...
#3: the perfect snack

junior mints and popcorn - a discovery brielle and her mom have been indulging on ever since snow white in theaters

#4: run an errand after the movie in order to be double productive 

we went to duane reade for nailpolish, of course.


#5: do something spontaneous 

lauren and brielle slid down the new york post office stair rails

Monday

mondays without my mate

alissa is home working (boo) so i had to preoccupy myself with happy things, as usual.

everyone, meet lauren!

she will be joining alissa and i next year as your third roommate!! we just found our apartment for next semester and it's all the three of us can talk about! 

little miss lauren convinced me to skip class today. seeing as it was 75 degrees and sunny, i didn't even think twice.

alissa and i always find at least one article of clothing that we wear the same, and lauren is no exception. today she showed up at my door wearing the same exact socks and shoes as i was.

we both agreed that we need to start wearing other shoes...


we then changed into tennis shoes, shorts and t shirts, went for a run, and celebrated spring with pinkberry.

speed dating

brielle and i worked the door.. needless to say we met more than enough nyu and columbia boys to go around.

last minute details by brielle i included rose petals to create a romantic atmosphere for all the potential lovers.

at the end of the day it was quite the success. 
we sure had a good time.

meatloaf mania

i haven't seen alissa in about 10 days, which for us is quite depressing so i decided to cook her dinner for her homecoming.

tonights dish: cheesy bacon turkey meatloaf 


meatloaf ingredients:

1 package (about 1.3 lbs) lean ground turkey meat
2-3 slices whole grain bread 
1 egg
1/2 cup chopped red bell pepper
1/2 cup chopped white onion
4 slices of bacon, cooked and crumbled (i used turkey bacon)
2 wedges Laughing Cow cheese
1 tablespoon barbecue sauce
generous dash Worcestershire sauce
1 teaspoon jarred minced garlic (or 2 cloves)
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
1/2 tablespoon olive oil (for sauteeing veggies)

topping/glaze ingredients:

1 tablespoon barbecue sauce
1 tablespoon ketchup
1 tablespoon honey
1/2 tablespoon spicy brown mustard

directions: 

first, preheat oven to 350 degrees.

secondly, toast the bread in the toaster oven. Put the toasted bread into the food processor and pulse until you have breadcrumbs. Set breadcrumbs aside.


next, sautee the pepper, onion, and garlic with olive oil until it's cooked through.


now, place all of the loaf ingredients (except for the Laughing Cow cheese) in a large bowl and combine well with your hands. kinda gross, but kinda fun..

then, spray a loaf pan or casserole dish with nonstick spray and put mixture into the pan.

next, slice each cheese wedge into thirds or fourths. stick each piece of cheese throughout the turkey mixture, pressing it into the middle of the loaf. try to seal the “holes” so the top of the meatloaf is flat again.



almost done! just combine glaze ingredients in a bowl, and spread the mixture evenly over the top of the meatloaf.

lastly, bake for 1 hour at 400 degrees and TAH-DAH! 

serve it with a simple salad, and you've got the perfect balanced meal!
